The BEST Gluten Free Peanut Butter Cookies Recipe // Truly Jamie

Hello Gorgeous!

Welcome back!! Today’s post is all about my fav cookies to make and to eat of course!

If you are subscribed to me on Youtube, you probably saw my video for this recipe! I just wanted to do a blog post including some extra fun pictures and also the written recipe for the cookies… So now you can screenshot it and try to make them at home! These are the yummiest cookies ever & the best part is they don’t even taste gluten free I promise!

RECIPE

WHAT YOU NEED:

1 cup peanut butter (DO NOT use natural or organic, it’s too oily and will not work in these cookies)

1 cup brown sugar

1 large egg

1 tbsp vanilla extract

1 tsp baking soda

3/4 cup toffee bites (I recommend using Health Mini Toffee Bites)

1/2 cup mini chocolate chips

DIRECTIONS:

1. In a mixing bowl combine all ingredients and blend with an electric mixer until smooth.

2. Roll cookies & drop onto cookie sheet about 2 inches apart. (Size of cookies is up to your preference; see video below on what size I prepared them)

3. Cover cookie sheet in plastic and freeze for AT LEAST 1-2 hours. (Cookies will fall apart if you skip this step- I typically do it overnight to be safe).

4. Preheat oven to 350F bake for about 10-11 minutes.

5. Allow cookies to cool on sheet for at least 5 minutes before transferred to a cooling rack or plate.

6. ENJOY!
