Gluten Free Honey Almond Coconut Granola Recipe

This is one of those recipes that is so simple yet makes you feel like a total suzy homemaker. Making homemade granola is easy, delicious, and extremely inexpensive. I came up with this Honey Almond Granola a few months back, and it’s such a treat. I store it in mason jars and usually gift at least one jar to a friend, it’s always a sweet surprise and people love it!

You can build upon this recipe and add whatever you’d like. Switch out the almonds for pecans, cashews, walnuts, etc. Use maple syrup instead of honey, chia seeds, flax seeds, or hemp hearts. You really cannot go wrong, and it’s fun to get creative with it.

WHAT YOU NEED TO KNOW

Make sure you bake the oats on a large enough cookie sheet so that they can get evenly golden brown. You will be stirring every 10 minutes, but you need a thin enough layer so every bit gets adequately baked. Granola is good for 1-2 weeks. Enjoy!

Honey Almond Coconut Granola

Prep Time 10 minutes
Cook Time 30 minutes
Servings 5 cups

Ingredients

  • 3 cups Gluten Free Rolled Oats my favorite is One Degree Organics
  • 1 cup shredded coconut unsweetened
  • 3/4 cup shaved almonds
  • 1/3 cup honey
  • 1/4 cup coconut oil
  • 2-3 tbsp flax seeds ground
  • 2-3 tbsp chia seeds
  • 2 tsps vanilla extract

Instructions

  1. Preheat oven to 300Β°F

  2. Combine all dry ingredients in large bowl. Mix together

  3. Add honey, coconut oil and vanilla. Stir until well combined

  4. Evenly spread mixture onto large baking sheet.

  5. Bake for 30 mins, stirring once every 10 minutes for a total of 3 times until granola is golden brown.

  6. Let cool. Store in air tight container or mason jars. Granola is good for 1-2 weeks
